I decided to post this so more people could benefit from this little recipe of mine.
If you know you have blood sugar crashes at night (either by refractometer/Brix readings, glucometer readings, or simply that by eating at night relieves your insomnia and/or other symptoms), this recipe may help. The important thing to remember is that it is only treating the symptom of hypoglycemia and that over time a major goal of yours should be to CORRECT the hypoglycemia, not simply self-medicate it.
Ingredients (there are ranges so that you can try different amounts, this is not a one-size fits all thing!):
Juice of 1-2 lemons.
Bovine (cow) gelatin, 1-2 Tbsp. (do NOT use porcine/pig gelatin), I prefer Great Lakes Unflavored Kosher Gelatin.
Sweetener…1-2 Tbsp. of organic unsulphured blackstrap molasses, regular molasses, maple syrup, raw agave nectar, or raw (preferably local) honey. I would personally use a combination of blackstrap molasses and raw honey (1 Tbsp. of each), I feel it gives the maximum minerals with the best taste.
3-4 ounces of room temperature (or colder) water for “blooming” the gelatin, I highly prefer distilled water for this.
Water (again, preferably distilled) to make the whole drink total between 12-16 ounces. If you have a great tendency towards hypoglycemia, try to use less water so as to “dilute” your blood sugars less with this drink. Also, less fluid means less trips …
